Chicken Pot Pie



This is the FASTESTEST and EASIEST Chicken Pot Pie recipe in the world! I got this recipe from my friend Kathy, who has made this in her home for years.

CHICKEN POT PIE

Ingredients
2 Pillsbury Pie Crusts (2 come in a box)
2 cans cream of potato soup
1 can mixed vegetables
2 cups chicken, cooked and diced
1/2 cup milk
1/2 tsp thyme
1/2 tsp pepper

Directions
Preheat oven to 375. Place one of your pie crusts down into a pie dish. In a separate bowl combine potato soup, vegetables, chicken, milk, thyme and pepper. Pour into pie crust and cover with the other crust. Pinch crust edges together. Vent by inserting a knife in the center of your crust. Beat 1 egg and lightly coat the top of the crust (optional). Bake 40 minutes and cool for 10.

Tiffany's Tips: I guess I should call this "Kathy's Tips" instead, but Kathy taught me the easiest and quickest way EVER to cook your frozen chicken breasts. I usually boil my frozen chicken breasts which takes 20 to 40 minutes. Kathy just puts her frozen breasts on a plate, microwaves them on high for 5 minutes, lets it sit for 2 minutes, and then depending on your breast size microwave another 2 to 3 minutes. Watch carefully because you can over cook them. My chicken breasts turned out just as tender as they would if I had boiled them.

I really like the blog and the tip. But, if I microwaved them I wouldn't have my own chicken stock to use later. But the microwaving tip would come in handy on busy days!

This really is a delicious recipe. I fed it to my Father-in-Law, and he couldn't get enough of it. You're right Donna. You wouldn't be able to have your chicken stock to use. As for me, I'm so excited to find out about this microwave tip because most of my nights are crazy, and anything to save me time is a keeper in my book! If you're really in a hurry, try a rotissery chicken you buy at the grocery store. It's really quite economical considering you pay almost the same price for a whole uncooked chicken, and they're really tasty, too. I love this recipe! Thank you so much!!
